Kale Potato Bacon Hash with Steamed Egg

My husband woke up bright and early to take my son snowboarding this morning. Three days straight on the mountain with single digit temps. Crazy kid. I think he’d live up there if I let him! With such a quiet house my girls and I slept until 10! TEN people!! That never happens! I don’t ever set an alarm because we are always up by 7. Without fail! Part of me loved it while the other part feels like I’ve wasted half my day.

A hearty brunch was in order and thats just what we had! Kale and shredded potato hash with a steamed egg and crumbled bacon.

Kale Potato Bacon Hash with Steamed Eggs

Whole Family: I added a sprinkle of sharp cheddar and a slice of whole wheat toast with apple butter. 

Ingredients

  • 1 bunch of kale stems removed and chopped small
  • 2 cups shredded potatoes
  • 1 tbsp olive oil
  • bacon crumbles
  • garlic powder
  • salt and pepper
  • 2 eggs

Instructions

  1. In a saute pan add olive oil and heat to medium. Add kale and shredded potato. Season with garlic powder, salt and pepper to taste. Allow kale and potatoes to sauté stirring frequently. About 10 minutes. Once potatoes are soft set aside and steam eggs. This is one of my favorite Whole30 breakfasts. It takes the plate at least three times a week! Enjoy!

Steamed Egg Method

  1. Grease a frying pan and heat to medium. Crack an egg and wait until the white sets. Add 1 tbsp water and remove from heat. Cover and let set for 3 to 4 minutes.

    What is the easiest way that you have found to cut the potatoes into hash form?

      Hi Jessy- Take a look at the Tools for Success section of the site! I use a spiralizer for a lot of my dishes. You can use the julienne blade setting and just chop the strings into shorter pieces if you like. https://www.cleaneatsandtreats.com/yummythings/tools-for-success-spiralizer
