This is my favorite summer salad! It’s sweet and salty and so refreshing! I love it alone or as a side with BBQ meats! Enjoy!
Watermelon Mint Salad with Feta Salad
Servings 4 servings
- 1 7-8 lb. seedless watermelon chilled
- 1/2 cup olive oil
- 2-3 limes juiced
- 1 tsp salt if needed
- 3/4 tsp black pepper
- 1 cup fresh chopped mint leaves
- 1 1/2 cups crumbled or cubed feta cheese
Remove rind from watermelon and cut into 1-inch chunks.
In a bowl whisk together olive oil, lime juice, salt and pepper.
Finely chop mint leaves.
Pour dressing over watermelon and sprinkle mint leaves on top.
Sprinkle feta on top of mint and gently stir to mix evenly.
Serve immediately. Enjoy!
