Watermelon Mint Salad with Feta Salad

Servings 4 servings

Ingredients

  • 1 7-8 lb. seedless watermelon chilled
  • 1/2 cup olive oil
  • 2-3 limes juiced
  • 1 tsp salt if needed
  • 3/4 tsp black pepper
  • 1 cup fresh chopped mint leaves
  • 1 1/2 cups crumbled or cubed feta cheese

Instructions

  1. Remove rind from watermelon and cut into 1-inch chunks.
  2. In a bowl whisk together olive oil, lime juice, salt and pepper.
  3. Finely chop mint leaves.
  4. Pour dressing over watermelon and sprinkle mint leaves on top.
  5. Sprinkle feta on top of mint and gently stir to mix evenly.
  6. Serve immediately. Enjoy!
