Warm Roasted Beet Salad

This is a copy cat recipe from a restaraunt in San Diego we visited a few years back! I craved it for days after we came home! The flavors are phenomenal and it’s a cinch to make! Pre-cooked beets are the key. I found Love Beets at our local Costco but Trader Joes has a pre-cooked baby beet option too! Enjoy!

Warm Roasted Beet Salad

Add grilled Rosemary chicken or steak for a complete meal.

Servings 2 servings

Ingredients

  • 16 oz pre-cooked red baby beets quartered
  • 1 package baby arugula
  • 1/4 cup feta cheese
  • 1/4 cup chopped pistachios
  • 1 small avocado sliced, halved
  • 1 tbsp Tessemaes Lemon Chesapeake dressing
  • lemon wedges

Instructions

  1. Roast beets. Preheat oven to 425 degrees. Spray baking tray with oil. Spread out beets evenly. Lightly spray beets with oil. Sprinkle with salt and pepper. Roast for 15-20 minutes.
  2. Toss arugula with Tessemaes.
  3. Layer arugula, feta, avocado and pistachios evenly onto two plates. Top with roasted beets.
  4. Squeeze lemon over salad. 
  5. Salt and pepper to taste.
