Quick & Easy Breakfast Cookies

I might just be known as the Queen of banana pancakes– 2 eggs + 1 banana = pancake amazingness. There had to be a way to use the same idea to make a cookie! Behold the Quick & Easy Breakfast Cookie! I know what your thinking. Cookies for breakfast? Trust me, these popable little gems are a must for busy mornings! My whole family loves them. Including my picky teens! I’ve never had a batch last longer than a day! Ever!

I don’t bake. I love to cook but baking is a whole different ball game for me. Growing up, my mother never made sweets. Baking wasn’t something I was taught or learned to love. I’ve always followed cookie recipes according to the directions adding too much butter and sugar for my liking. My husband on the other hand is a Cookie Monster and makes a batch of chocolate chip cookies weekly! He is always asking for a healthier option, so I decided to try my hand at a cleaned up cookie and these were a HUGE hit! Even with the Monster himself.

The key is to make sure you have the right consistency. Make sure you mash your banana to a sticky smooth but still a little lumpy texture. My six-year old has this part down! Just give your little a bowl of bananas and a potato or egg smasher. Not only do they love helping, they will be more likely to gobble up their own creation!

You can use instant oats or regular. But I recommend regular.  I throw mine in the blend-tec for a few pulses to break them down. This makes them more likely to stick together when added to the banana.

You want a “dough” like final result. Can you see the lumps of banana? If its too dry add a little applesauce. If its too sticky add a bit more oats. This recipe has been tested over and over and I really feel like we perfected quantities so you should be set! Once you have the right consistency, add in whatever mix-ins you’d like or enjoy them alone!

Optional mix-ins:

  • Mini chocolate chips (we use enjoy life brand)
  • Chopped nuts
  • Dried fruit
  • Spices: Cinnamon, allspice or nutmeg are all good choices

I know using mini muffin tins these should be called “muffins” not “cookies” but a little reverse psychology never hurt a mothers attempt to feed her kids a little healthier! Let’s be honest my kids would much rather eat a “cookie” than a bowl of oatmeal and mashed bananas. Am I right? I hope your family loves these as much as mine!

Disclaimer: I’ve been known to eat 8 or more in one sitting… They are THAT good! BUT if you think about it, that’s only 1 banana and 1/2 cup of oats plus a little added chocolate, nuts or fruit. No different than a bowl of oatmeal! But I’d much rather eat a cookie. Wouldn’t you? Enjoy!

Quick & Easy Breakfast Cookies

Servings 24 mini muffin "cookies"

Ingredients

  • 3 very ripe bananas
  • 1 1/2 cups GF old fashioned oats I like to pulse in the blender for a second to break down the oats a bit
  • handful of mini chocolate chips optional
  • 1 egg beaten
  • 1 tsp cinnamon
  • Mini Enjoy Life chocolate chips optional

Instructions

  1. Mash banana until smooth but still a little lumpy.
  2. Add egg, cinnamon and oats.
  3. Mix until oats are well blended and evenly coated. You should have a dough like texture.
  4. Add whatever mix-ins you'd like, about a handful total (1/2 cup maybe) works best.
  5. Grease mini muffin tin well (a cookie sheet would also work).
  6. Using a 2-in cookie scoop, scoop batter into mini muffin cups.
  7. Bake at 350 degrees for 15 min. Enjoy!

Recipe Notes

We've always eaten ours up within a day, but they would do fine in the fridge up to a week. They also freeze up well too.

    Thank you for this quick and easy recipe! My kids can be horribly picky, and generally if one likes something the other one doesn’t. Of course! But both of my girls love these bites! Even my six year old, who is not a big breakfast person, requests these and gobbles them up.

    Do you think I could use coconut flour with this recipe? I know it is so weird to bake with but I have a little guy ugh a million allergies, including oats and eggs:/ Finding baked goods to make has been really hard. Love your blog!

    I have these in the oven right now! We tweaked the recipe a tiny bit by using two eggs and adding a bit more ground oats, some natural peanut butter, cacao powder and unsweetened shaved coconut. YUM doesn’t even begin to describe it
