Lemon Chia Powerballs

These little lemon gems are such a refreshing popable treat! Perfect for a pre or post workout snack too! I throw them in my kids lunches and keep them in our snack basket in the fridge to grab and go! I created this recipe when doing a paleo cleanse and had to eliminate oats (and my staple powerballs). Post cleanse they still make the snack prep cut once a week around here! There is something so refreshing about the tart lemon taste! Perfect for warmer weather! Lemon Chia Powerballs

Servings 12 balls

Ingredients

  • 1 cup raw walnuts
  • 1/2 cup raw almonds
  • 1/2 cup unsweetened shredded coconut plus additional for rolling the balls
  • 1 Tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 1 cup medjool dates (about 10-12) pitted and roughly chopped
  • 1-2 Tbsp fresh lemon juice start with less and add more if necessary
  • 2 tsp lemon zest
  •  pinch of sea salt

Instructions

  1. In a food processor blend the walnuts, almonds and coconut to a coarse meal.
  2. Add dates, lemon zest, lemon juice, vanilla extract, pinch of salt and chia seeds.
  3.  Process until the mixture forms a rough dough that can easily hold together when pinched between your fingers.
  4. Taste test and add more lemon juice/zest if necessary.
  5. Roll into small (1 to 1 1/2-inch) balls. A 2-inch cookie scoop would also work.
  6. Roll balls into additional coconut flakes.
  7.  Store in an airtight container in the fridge.
