Chili Stuffed Roasted Acorn Squash by Clean Eats and Treats
Leftovers are my love language. Anything that makes dinner prep easier speaks to me. I made a huge batch of Perfect Pumpkin Chili with this meal in mind!
Chili Stuffed Roasted Acorn Squash
- Cut acorn squash in half lengthwise and brush with avocado oil
- Sprinkled with cumin, garlic powder and sea salt.
- Roast on baking sheet at 425F for 25-30 minutes or until tender
- Overly stuff with Perfect Pumpkin Chili, a sprinkle of colby jack cheese, sliced olives, and a dollop of greek yogurt. Delish!
Dinner with little to no prep work. Bam!
