Lemon Brussel Sprouts with Parmesan

Brussel sprouts are by far my favorite green veggie! This is the ONLY way I can get my family to eat them! The first time I served this dish my four year old asked for seconds and then thirds!

Lemon Brussel Sprouts with Parmesan

Leave out the breadcrumbs for a Gluten Free version!

Ingredients

  • 2 lbs shaved brussels I like to buy pre shaved from Trader Joes
  • 1/4 cup grated parmesan
  • 1/2 Tbsp ground black pepper
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 Tbsp lemon infused olive oil
  • 1/3 c toasted breadcrumbs

Instructions

  1. Saute shaved brussel sprouts in lemon olive oil, sprinkle with garlic salt, salt and pepper. Cook until dark green in color and caramelized on the edges stirring often.
  2. To toast the breadcrumbs: I used 2 slices of toasted Ezekiel bread. Once cooled I pulsed it  in blender until crumb consistency was reached. Then sautéed in 1 tsp ghee until golden brown.
  3. Toss with toasted breadcrumbs (instructions below) and parmesan cheese. Enjoy!
