Love Beet Hummus

Our favorite snack just got a pretty pink make over just in time for love day! Hummus is a staple in our home. Its easy to make, full of protein and everybody loves it! Its also a great way to sneak those veggies into your littles! Dip with carrots, peppers and cucumbers and watch them disappear!

 Love Beet Hummus by Clean Eats & Treats

I decided to add some roasted beets for a fun Valentines Day spin and the result was not only beautiful but delicious! You may want to double or triple the batch… it goes fast! The smoky flavor from the roasted beets combined with the citrus punch from the lemon takes this recipe to the next level. I topped ours with toasted pine nuts and olive oil. Enjoy!

Love Beet Hummus

Ingredients

  • 3  love beets
  • 1 can great northern beans
  • 1/8 cup unsalted almond butter
  • 1/8 cup tahini
  • 4 cloves garlic
  • 4 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp cumin
  • 1 tsp sea salt
  • 2-3 tbsp olive oil plus 1 tsp

Instructions

  1. Preheat oven to 425 degrees.
  2. Quarter love beets and toss in 1 tsp olive oil. Lay beets out evenly on a parchment lined cookie sheet.
  3. Roast for 20 minutes or until fork tender. Remove from oven and allow to cool.
  4. Add all ingredients to your food processor, except for the oil, and puree for 1 to 2 minutes. Scrape the sides and pulse for an additional 30 or so seconds. Slowly add the oil while the mixture is processing, adding more or less as needed, until nice and creamy. Serve with crackers and fresh cut veggies. Enjoy!
