Taco Boats

Probably one of my most requested and enjoyed Whole 30 meals to date! Lunch is hard and I’m always looking for convenience. These are put together in under 5 minutes with the right preparation!

Taco Boats

Tip: If making tacos for dinner, prepare extra taco meat to store for leftovers during the week. It makes this meal a snap!

Servings 4 servings

Ingredients

  • 1 lb lean ground turkey
  • 1/2 onion
  • 3 tbsp Clean Taco Seasoning
  • 1 small can mild diced green chilis
  • 1 cup grape tomatoes sliced
  • Greek Gourmet pepperoncini
  • 4-6 tbsp chunky guacamole
  • 4-6 tbsp crumbled bacon optional
  • squeeze of lime juice
  • 1/2 cup cilantro chopped
  • 4-6 romaine leaves

Instructions

  1. In a sauté pan over medium heat brown turkey meat and onion until turkey is no longer pink. Remove from pan, rinse and drain. Add back to pan and heat over medium-low.
  2. Add diced green chiles and seasoning. You may need to add a little water or beef stock to meat mixture for moisture. Continue cooking until fragrant.
  3. Serve atop romaine leaves and top with tomatoes, pepperoncinis, guacamole, bacon, lime juice, and cilantro. Enjoy!
