Mixed Berry Spinach Salad with Strawberry-Pomegranate Vinaigrette

Summer salads are what we live for during these hot busy months! Easy to throw together plus light and delicious, they make an appearance at every meal! Add some grilled chicken or steak for an added protein boost and dinner is served! The combination of berries and baby spinach here is perfect but it’s the vinaigrette that steals the show! Its sweet, tart and thick! It’s almost good enough to drink! Enjoy!

Mixed Berry Spinach Salad with Strawberry Pomegranate Vinaigrette

Servings 4 servings

Ingredients

Berry Spinach Salad

  • 8 cups baby spinach
  • 1 cup strawberries sliced
  • 2/3 cup raspberries
  • 1/2 cup blackberries
  • 1/2 cup blueberries
  • 1/2 cup sliced almonds
  • 3/4 cup feta cheese

Strawberry Pomegranate Vinaigrette

  • 2/3 cup olive oil
  • 3/4 cup strawberries
  • 1/4 cup pomegranate juice
  • 1/4 cup pomegranate vinegar
  • 2 tbsp raw honey
  • 1 tsp Mrs. Dash garlic seasoning
  • salt and pepper to taste

Instructions

For the dressing:

  1. Add all of the ingredients to a blender.
  2. Pulse until combined and the dressing is thick and smooth. If the seeds bother you strain through a sieve before serving. Store leftover dressing in the refrigerator.

For the salad:

  1. Fill a large bowl with spinach.
  2. Top with berries, almonds and feta cheese.
  3. Drizzle with vinaigrette. Serve immediately. Enjoy!
