Mixed Berry Spinach Salad with Strawberry Pomegranate Vinaigrette

Ingredients

Berry Spinach Salad

  • 8 cups baby spinach
  • 1 cup strawberries sliced
  • 2/3 cup raspberries
  • 1/2 cup blackberries
  • 1/2 cup blueberries
  • 1/2 cup sliced almonds
  • 3/4 cup feta cheese

Strawberry Pomegranate Vinaigrette

  • 2/3 cup olive oil
  • 3/4 cup strawberries
  • 1/4 cup pomegranate juice
  • 1/4 cup pomegranate vinegar
  • 2 tbsp raw honey
  • 1 tsp Mrs. Dash garlic seasoning
  • salt and pepper to taste

Instructions

For the dressing:

  1. Add all of the ingredients to a blender.
  2. Pulse until combined and the dressing is thick and smooth. If the seeds bother you strain through a sieve before serving. Store leftover dressing in the refrigerator.

For the salad:

  1. Fill a large bowl with spinach.
  2. Top with berries, almonds and feta cheese.
  3. Drizzle with vinaigrette. Serve immediately. Enjoy!
