 Kale Waffle Christmas Tree Stack by Clean Eats & Treats

My four-year old had her Pre-School Christmas party today. Naturally breakfast had to be festive! I absolutely love Activz powders and sneakily add them into almost every meal! The only thing my little noticed was that her Kodiak Cakes waffles were green just like our Christmas tree and tasted like cinnamon vanilla! Mom win! We used fresh berries to decorate with a pineapple star, then added a few squirts of whipping cream to flock the tips, because flocking is necessary!

Kale Waffle Mix

Ingredients

  • 1 cup Kodiak Cakes power cakes mix
  • 1 cup milk
  • 1/8  cup water if needed to thin
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp  Activz kale powder
  • 1 large handful of spinach
  • honey to taste if desired

Instructions

  1. Combine milk, honey and spinach in a blender and blend until smooth.
  2. Add egg and vanilla and pulse until well blended. Add dry ingredients to a bowl and mix well.
  3. Pour milk mixture over dry ingredients and blend until smooth. Slowly add water to batter if needed to thin.
  4. Cook in a heated waffle iron until lightly browned. Enjoy!
