Fruit & Yogurt Parfait Toast

Avocado toast is so 2020. Right? Well, there’s a new toast in town and it’s quite possibly our families newest breakfast obsession. Say hello to fruit and yogurt parfait toast…

Yep, you read that right…. hearty bakery bread plus a thick layer of creamy vanilla bean Noosa yogurt piled high with all the fresh fruit and then drizzled with honey… holy yum! I mean, I’ll never quit a good avocado toast, but we are determined as a family to try new recipes in 2021. I’d say we’re off to a pretty good start!!

Parfait Toast Toppings

We loaded ours up with lots of fresh fruit, nuts, seeds and honey. There is no wrong way to do parfait toast. Load it up and dig in!!

Here’s a few ideas if you need them…

  • banana
  • grapes
  • strawberries
  • blueberries
  • clementines
  • kiwi
  • mango
  • apples
  • pomegranate arils
  • hemp seeds
  • chia seeds
  • pumpkin seeds
  • nuts
  • honey
  • vanilla bean yogurt

My kids had a blast making their own messes, I mean toast creations and they gobbled them right up!! Giving your kids freedom to create in the kitchen is hands down the simplest way to get them to try new foods. I was actually shocked at how daring they were with their choices!!

How to make Parfait Toast

  1. Toast up your favorite bakery bread.
  2. Slather a thick layer of creamy vanilla bean Noosa yogurt on top.
  3. Pile it high with fruits of choice, we had fun making a rainbow!!
  4. Sprinkle with nuts or seeds if you’d like.
  5. Drizzle with local honey.

Just look at all those fruity flavors!! This recipe would also be fun for a St. Patricks day breakfast!! Just add a side of scrambled eggs or sausage coins!!

Fruit & Yogurt Parfait Toast

Course Breakfast
Prep Time 10 minutes
Servings 4

Ingredients

  • 4 slices hearty bakery bread
  • 1/2 cup noosa vanilla bean yogurt
  • 4 strawberries, sliced
  • 2 clementines, sectioned
  • 1 banana, sliced
  • 1 cup grapes, halved
  • 1 kiwi, chopped
  • 1/2 cup blueberries
  • 4 tbsp honey
  • 1 tbsp chia seeds, optional
  • 1 tbsp hemp seeds, optional

Instructions

  1. Toast bread and top with yogurt.

  2. Arrange fruit on top, drizzle with honey and sprinkle with seeds of choice. Enjoy!
