Clean Avocado Deviled Eggs

Spring is officially here, although its still snowing here in Utah! Part of me wants to hibernate until the sun decides to show up and part of me can’t wait for spring festivities! It’s a struggle. With all the holiday parties coming up I wanted to create a clean version of deviled eggs. My family has all jumped on the clean eating train as of recently and we have been having so much fun swapping recipes! This one was a keeper! The kids even gave it two thumbs up! Enjoy!

Clean Avocado Deviled Eggs

Servings 6 servings

Ingredients

  • 6 eggs hard boiled and peeled (I like to steam in the Instant Pot)
  • 2 ripe avocado
  • juice of one lime
  • 4 slices of clean bacon cooked and crumbled
  • generous sprinkle of garlic powder
  •  kosher salt and pepper to taste
  •  smoked paprika
  • chives for garnish

Instructions

  1. Slice eggs in half and add ½ of all yolks to a bowl. Discard the remaining ½ or set aside for another use.
  2. Remove flesh from avocados. Mash with a fork until thick and creamy.
  3.  Add egg yolks to avocado mix and season with garlic powder, salt and pepper.
  4. Add lime juice and mix well.
  5. Scoop avocado mixture into egg whites and sprinkle with bacon,  chives, and smoked paprika. Enjoy!

    This is linking wrong when going to print or PDF– it is going to holiday turkey? Not sure why. I’ll cut and paste into Word to print, but thought you’d like to know. Excited to try this recipe!
