Florentine Alfredo with Chicken Sausage and Roasted Tomatoes

Ingredients

  • 1 package Aidells chicken sausage
  • 1 jar Alfredo sauce homemade if you have time would be even better or marinara works too
  • 1 package bow tie pasta
  • 1 package fresh spinach chopped
  • 2 cups grape tomatoes sliced in half
  • 2 cloves garlic crushed
  • 1 tbsp avocado oil
  • salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Preheat oven to 425 degrees. Line a cookie sheet with parchamant paper. Season tomatoes with salt, pepper and garlic powder. Roast at 425 degrees for 20 minutes. Remove and set aside.
  3. Slice sausage in half and brown until golden over medium heat.
  4. Add oil and crushed garlic to the sausage pan and heat until fragrant.
  5. Add spinach and sauté until cooked down.
  6. Add Alfredo sauce to pan and simmer on low.
  7. Salt and pepper to taste.
  8. Layer noodles, Alfredo sauce and tomatoes on a platter. Serve with freshly grated Parmesan cheese. Enjoy!
