Strawberry Lemonade Powerballs

Nothing screams summer quite like a tall glass of ice cold lemonade on a hot sunny day! Adventuring in the heat requires refreshing snacks and these strawberry lemonade powerballs will have your taste buds jumping for joy!

Strawberry Lemonade Powerballs

Don’t get me wrong… my love for the original powerball still runs DEEP but sometimes you just need something fruity to satisfy your sweet tooth! Bonus: they are made with real wholesome ingredients that not only taste amazing but fuel your body too! My kids actually prefer these to cookies or cake! Mom win!

Tips for the perfect POWERBALL

  • Use OLD FASHIONED oats. Not instant, quick or Irish.
  • Break down your oats in a blender to almost flour like consistency.
  • Blend dry ingredients together first, then add wet.
  • A kitchen aid mixer is not necessary, but highly recommended.
  • Get to know your dough. Once you’ve nailed the perfect consistency the options are endless.

I don’t know how I ever made power balls without a kitchen aid mixer and cookie scoop. Fun fact: I used to run a small meal prep business out of my kitchen, mostly to friends and family. I would roll out hundreds of powerballs a week. HUNDREDS. My hands used to cramp up so badly after several batches. Not anymore! Cookie scoop to the rescue!

Freeze dried fruits are our go to for a sweet treat! My kids and I both love them and it’s become a pantry snack staple! I’ve been trying to increase our OptUP score by buying more produce and these Simple Truth freeze dried strawberries are helping us out deliciously. My kids like them better than fresh berries, so we buy both. Balance right? They were the perfect addition to this strawberry lemonade powerball recipe! I picked mine up at my local Smiths grocery store.

Back to these little gems. Look at those tiny specs of deliciousness. I crushed the strawberries pretty fine, you don’t want large chunks. I love how they look. Aren’t they pretty? Pretty freaking delicious!!

I like to lay them out on a cookie sheet and freeze them for about 20 minutes. This helps them firm up as the dough can be pretty soft. Once set you can keep them in the fridge in an airtight container for up to a week, if they last that long!

These are sure to be a summer snack drawer staple. We have a rotating stash of powerballs in our fridge at all times. They are perfect for on the go snacking and keep us fueled for all of our summer adventures! Whether we are headed to swim lessons, playing in the mountains, out on the lake or at a family potluck these little gems will be coming with us!

Strawberry Lemonade Powerballs

Prep Time 20 minutes
Total Time 20 minutes
Servings 32 balls

Ingredients

  • 2 cups Kroger old fashioned oats slightly broken down in the blender
  • 1 cup Maranatha coconut butter softened in the microwave
  • 1/2 cup Simple Truth freeze dried strawberries crushed
  • 2/3 cup Simple Truth raw honey
  • 1/4 cup unsweetened coconut shredded
  • 2 scoops vanilla protein powder
  • 2 tbsp Simple Truth coconut oil melted
  • 1 tsp pure vanilla extract
  • 1/4 tsp turmeric
  • zest of one lemon about 2 tbsp
  • juice of half a lemon about 1 tbsp
  • dash of sea salt

Instructions

  1. Combine all dry ingredients in a kitchen-aid mixing bowl. 
  2. Using the paddle attachment, mix until well blended.
  3. Add wet ingredients to dry ingredients and mix until a "dough" forms.
  4. Scoop into balls with a 2-inch cookie scoop.
  5. Place onto a cookie sheet and refrigerate for at least one hour before serving.
  6. Store in the refrigerator for up to one week.

      I picked mine up at my local KROGER Smiths grocery store but I have also seen it on Vita Cost!

    I was very excited to try this and I got Vega Protein and Greens Powder (Vanilla flavored) at Costco. The powerballs taste terrible, and I think it is the Vega protein. So maybe the essential vega protein powder is better. Also, I think the scoops are different sizes. Can you include number of tablespoons of protein powder in the recipe?

      Yes! VEGA is very strong and chalky. I would only do one scoop of Vega. I would say a scoop is equivalent to 1/8 cup.
