Triple Berry Sundaes with Lemon Cake Ice Cream

I scream, you scream, we all scream for ice cream! Nothing screams summer more to me than the marriage between lemon and fresh berries. It has to be one of my all time favorite food combinations. I’m always looking for ways to lighten up dessert. My family has a mouth full of sweet teeth and my goal in life is to prove to them clean treats are just as good, if not better than the original! This triple berry sundae with Low Cow lemon cake ice cream wins all the things. Its packed full of protein, low in fat and full of flavor! Need I say more?

Today as I was aimlessly wondering around the grocery store trying to decide what to cook for dinner, I found myself smack dab in the middle of the frozen dessert section. July has proven to be a hot one here in Utah. We reached 103 degrees today. The last thing I wanted to do at the end of the day is slave over a hot stove.

Then it hit me.

As I opened the freezer door to cool off I thought to myself, be the fun parent and serve dessert for dinner tonight! Gasp I know. So unlike me, but its hot and I’m obviously not thinking clearly. Wanna know the best part? I didn’t even feel bad about it. I found a new product called Simple Truth Low Cow ice cream. It’s creamy, delicious and has 80% less fat and 60% fewer calories than regular ice cream, plus its high in protein and doesn’t leave you with a chalky after taste. Just don’t tell my kids, they totally thought they ate junk for dinner!

Of course I balanced it out with a scoop of fresh berries. I mean, how can I pass them up when they are staring me straight in the face, aren’t they pretty? My local Kroger store always has the best fruit, and now the best ice cream too! Did I mention it’s less expensive than similar brands as well. Run don’t walk.

I picked up all six flavors of Low Cow, because a girl needs options. Chocolate, vanilla bean, sea salt caramel, lemon cake, mint chocolate chip and birthday cake. Just think of the possibilities. Ice cream party anyone? Head to your Kroger store and be the fun parent tonight!

I used the Lemon Cake ice cream for our berry sundaes and topped ours off with some fresh lemon zest and a lemon cookie. TOO DIE FOR. But this combo won’t leave you feeling awful. Low Cow is non-GMO, gluten free, and made with absolutely no artificial ingredients or preservatives. Something all mamas can feel good about feeding their kids! Mine went nuts for it and I know yours will too! Enjoy!

Triple Berry Sundaes with Lemon Cake Ice Cream

Servings 4 servings

Ingredients

  • 2 pints Simple Truth Low Cow Lemon Cake ice cream
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh blackberries
  • 1 cup fresh raspberries
  • juice of two lemons
  • 1 tbsp Simple Truth coconut sugar
  • zest of 2 lemons
  • cookie of choice optional 

Instructions

  1. Remove ice cream from freezer. Allow to set out for 10 minutes to soften.
  2. Mix berries in a medium bowl. Sprinkle with coconut sugar. Add lemon juice and set aside.
  3. Add two scoops of lemon Cake Low Cow ice cream to four separate bowls.
  4. Top with 1/2 cup of the berry mixture.
  5. sprinkle with lemon zest and serve with a cookie if desired.
