Apple Nachos

Sliced honey crisp apples + paleo caramel + almond butter mixed with coconut milk & honey to thin + raw shredded coconut + mini chocolate chips! A Whole Family favorite treat at our house! If you like ooey gooey caramel apples you’ll love this healthier version!

This is our FAVORITE date night & Sunday snack! We make a huge serving and share them until they are gone and someone always ends up licking the plate!

Apple Nachos

Ingredients

Apple Nachos:

  • Sliced honey-crisp apples or apples of your choice
  • Almond butter thinned with almond milk and honey
  • Shredded coconut
  • Mini chocolate chips I use enjoy life
  • Paleo caramel recipe below

Dairy Free Caramel:

  • 1 c coconut milk full fat or lite
  • 1/2 c coconut sugar brown sugar would also work
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp water
  • 1/2 tbsp fresh lemon juice

Instructions

Apple Nachos:

  1. Slice apples and layer evenly on a plate or tray. Top with toppings and enjoy!

Dairy Free Caramel:

  1. In a small pot over medium heat mix coconut sugar, water, and lemon juice and bring to a boil
  2. Immediately add coconut milk (pouring slowly), salt, and vanilla
  3. Whisk well. Simmer for about 15 minutes until liquid becomes thick and dark
  4. Be sure to stir occasionally and scrape the edges of the pot with a rubber spatula to avoid burning
  5. Remove from heat once thickened and cool to room temperature
  6. If using brown sugar you may need to thicken a bit more. Add 1 1/2 tbsp cornstarch blended with 1 1/2 tbsp cold water and add slowly to caramel
  7. Whisking until well blended. Bring to a boil and remove once desired thickness is acheived
  8. For best results store caramel overnight and serve the next day
  9. This recipe tastes like rich toffee and is in my opinion even better than the norm with less fat, sugar and calories! Enjoy!
