JOY Vegetable Platter

 JOY Vegetable Platter by Clean Eats & Treats

Such a fun and festive platter to bring for a Christmas get-together! The construction is so simple my four-year old assembled the majority of this by herself. Plus you have a back up option if you can’t eat what is being served. En-JOY!

JOY Vegetable Platter

Ingredients

  • Cauliflower
  • Broccoli
  • Grape tomatoes or radishes
  • Yellow peppers
  • Mini star cookie cutter
  • Medium ramekin
  • Rectangular platter

Instructions

  1. Start by washing all veggies. Cut up your broccoli and cauliflower into small pieces.
  2. Place the ramekin in the enter of your platter and build around it with cauliflower.
  3. Add broccoli as a barrier wall for structure surrounding it. You will end up with a double layer of all veggies. Lay broccoli out in a thin layer.
  4. Form the letter "J" with a layer of tomatoes and again surround with broccoli for structure. Add a second layer of tomatoes and secure with toothpicks if needed.
  5. Repeat the process with the letter "Y". Finally cut out your mini stars using the yellow pepper, or you could also use cheddar cheese. Place the stars around the platter.
  6. Fill the ramekin with your favorite veggie dip. We love my Loaded Spinach Dip found here. En-JOY!
