Turkey Zoodle Soup with Stuffing Dumplings

Ingredients

Dumplings:

  • 2 cups cooked stuffing
  • 2 eggs
  • 1/2 c whole wheat flour

Soup:

  • Turkey stock
  • Diced leftover turkey
  • Garlic onion
  • Celery
  • Carrots
  • Zucchini zoodles
  • Fresh green beans
  • Fresh herbs I used rosemary, sage, and thyme
  • Salt & pepper to taste
  • Sprinkle of Parmesan cheese

Instructions

Dumplings:

  1. Combine egg and flour and whisk into a thick paste. Add to stuffing slowly and mix well until sticky. Add by heaping spoonfuls to boiling stock.
  2. Cover and cook for 8 minutes or until a toothpick inserted in the center comes out clean. Obviously omit dumpling if doing Whole 30.

Soup:

  1. Combine ingredients, add salt & pepper to taste and a sprinkle of Parmesan cheese on top!
