As if guacamole isn’t good enough by itself. Grilled pineapple takes it to a whole new level! I planned on making a pineapple pico to go with dinner but ended up stuck in a torrential downpour and was late getting home. So rather than waste the leftover grilled pineapple I had already diced I just threw it in with the guac! Some days my family should thank me for being lazy! The addition of flavor from the pineapple is top notch! I may never eat plain guac again and I’m ok with that!
Grilled Pineapple Guac by Clean Eats & Treats
The key to getting my kids to love guacamole is by finely FINELY dicing the onion and serreno peppers. They won’t touch it with chunks. And by fine I mean minuscule. It’s tedious but they end up licking the bowl clean after a healthy snack so the extra work is worth it to me!
FINELY diced onion & serreno pepper
Grilled Pineapple Guac
- 3 large ripe avocados
- 1/3 cup red onion finely diced
- 1-2 serreno peppers seeds removed and finely diced
- handful of cilantro finely chopped
- 1 tbsp fresh lime juice
- 1-2 cloves garlic minced
- kosher salt to taste
- 3 slices about 1/2 inch thick fresh pineapple
- 1 tsp olive oil or cooking spray
Heat grill to high. About 300 degrees. Brush pineapple slices with olive oil or spray with cooking spray. Grill 5 minutes per side, until nicely browned. We like ours charred a bit for extra flavor! Remove and allow to cool to room temperature. Once cooled remove core, dice and set aside.
Cut avocados in half lengthwise. Remove pit and scoop flesh from its shell into a bowl.
Add lime juice and salt and mash lightly with a fork.
Add onion, peppers, cilantro, garlic and pineapple. Mix well.
Serve with veggies, tortilla chips, or on top of Honey-lime shrimp tacos. Enjoy!
