Clean Eats Power Snack Box

January 31, 2017 28 Comments

Meal prep is a huge part of my clean eating success. If its ready and available I grab it , if its not I grab crap. Simple as that. One of my favorite weekly meal prep staples is the Power Snack Box. Always in my fridge for days when I have less than 15 minutes to get out the door. Packed full of healthy snack choices, these boxes will keep you away from the drive-thru. They’re simple, nutritious, and satisfy cravings for both sweet and salty. I rarely leave home without one.

I like to prepare four boxes at a time to keep on hand. Between my kids and I we grab at least one daily. If we run out I will refresh them midweek. They are ALWAYS available!

Whats inside:

  • Apples provide a sweet fix packed with fiber, vitamins, and nutrients.
  • Nut butter contains healthy fats and protein to keep you full.
  • Raw veggies give you a whole array of vitamins, minerals, and fiber.
  • A boiled egg provides much-needed protein. Eat the yolk; it contains the majority of the egg’s beneficial nutrients.
  • Cheese is an excellent source of calcium and added protein.
  • Crackers lend you some carbs that’ll help avoid those energy crashes mid-morning and mid-afternoon.

You can easily substitute other items in your snack box too (e.g., muffins, raw nuts, seeds, or dried fruits to add some extra variety). Customize to your liking! Enjoy!

Clean Eats Power Snack Box

each box contains

  • 1/2 an apple, sliced (I like to toss my apple slices in lemon juice to avoid browning)
  • 1 hard boiled or *hard steamed egg
  • 1 cheese stick, cubed
  • 8-10 crackers of your choice (I like Nut Thins)
  • handful of celery sticks
  • handful of carrot sticks
  • 2 tbsp nut butter of choice

*Have you made hard steamed eggs in your Instant Pot yet? If not you must try! See this post for the how to!

Just curious if you have a problems with your nut thins and/or crackers being kept in the refrigerator. Mine always seem to be stale.

Is there a brand name or anything on your boxes? I found a set of 50 on Amazon that are 6.5″L x 4.5″W x 2.5″ high. Yours look a little bigger, and look to be the perfect size.
