Breakfast Scramble for Two

Some mornings I get up extra early and make my hard working man breakfast. Some. Always on Saturday and Sunday but during the week I struggle. He deserves it. Immensely. Something I’m working on. Today I made it up bright and early for a run and had breakfast on the table by 7 am. We chatted over this awesome scramble before he headed out the door and it has most definitely been the highlight of my week thus far. Must do this more often! Is it the weekend yet?

Breakfast Scramble for Two

Ingredients

  • 1 Aidells chicken and apple sausage diced
  • 4 eggs whisked
  • 1 medium zucchini diced
  • 1 medium summer squash diced
  • handful of grape tomatoes sliced in half lengthwise
  • handful of basil leaves chopped
  • 1/2 avocado
  • 1 tbsp avocado oil
  • sriracha sauce
  • salt and pepper to taste

Instructions

  1. Heat oil over medium heat. Add sausage, zucchini and yellow squash. Sauté until sausage is lightly browned and veggies are tender.
  2. Add eggs and season with salt and pepper. Cook until set.
  3. Top with basil, tomatoes, avocado, and sriracha. Enjoy!
