Maple Citrus Grilled Chicken

Spring is in the air and all I can think about is summer and firing up our Traeger grill! I long for warm summer nights, the smell of the bbq, family dinner on the back porch and the sound of the neighborhood kids playing in the distance. The days are long and the nights are slow. Oh summer I miss you.

This winter seems to be never ending in Utah, but it won’t stop me from brushing the snow off the bbq and firing it up! I may be grilling in my winter coat and Uggs but this chicken dish is well worth the frostbite! Serve it with a side of roasted veggies or on top of a crisp garden salad! Either way its sure to make your mouth water and bring those much needed summer vibes! Enjoy!

Maple Citrus Grilled Chicken

Servings 6 servings

Ingredients

  • 6 chicken breasts or 12 cutlets
  • 3 cloves garlic minced
  • 1/2 lemon juiced
  • 1 lime juiced
  • 1/2 orange juiced
  • 3 tbsp dijon mustard
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 1 1/2 tsp sea salt
  • pepper to taste

Instructions

  1. Combine garlic, lemon juice, lime juice, orange juice, dijon, apple cider vinegar, olive oil, maple syrup, sea salt and pepper in a large container or plastic bag.
  2. Add chicken and allow to marinade for at least 2 hours to overnight (overnight is best).
  3. Grill until breasts are cooked through.
  4. Enjoy as a side or not op of a fresh garden salad.
