Clean Eating Ebelskivers

A beloved treat in their native Denmark, ebelskivers are light, puffy pancakes that can be filled. A childhood favorite of my husband’s. I knew I needed to create a cleaner version for our whole family to carry out the tradition! These little guys passed the test!

Clean Eating Ebelskivers

Ingredients

  • 3 eggs separated
  • 1 tbsp honey
  • 2 c almond milk
  • 1/2 tsp salt
  • 2 c Kodiac Cakes pancake and waffle mix this stuff is seriously amazing
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  1. Beat yolks. Add honey salt and almond milk.
  2. In a separate bowl mix Kodiac mix, baking soda and baking powder. Add to yolk mixture and blend well. Finally beat egg whites until stuff. Carefully fold into egg yolk and Kodiac mix.

Cook over medium heat in a well greased Ebelskiver pan (Williams Sonoma sells a good one)

I like to use coconut oil.

Fill each cup 3/4 of the way full.

We added a teaspoon of apple butter to the center of ours. You could also add berries, nut butters, pumpkin purée, jams and jellies ect.

They cook fast! I use a wooden kabob stick to flip. Chop sticks work too. It takes practice! Just remember they taste the same no matter what they look like! Enjoy! Serves 4-6
