Pickled Carrots and Red Onions

The most delicious garnish to jazz up any meal!

  • 1 medium purple onion sliced thin
  • 2 medium carrots julienned or spiralized
  • 2 cups red wine vinegar
  • 1 cup water
  • 4 tbsp sugar
  • 2 tsp salt


  1. In a small saucepan heat the vinegar, water, sugar and salt until boiling. Turn the heat off and add carrots and onions. Cover with a lid and allow to cool to room temperature, about 30 minutes.

  2. Place all ingredients in a mason jar or glass dish, cover and refrigerate for at least one hour to overnight. The longer they set the more flavor. 

  3. To serve, drain vegetables and set in a small dish as a garnish.
