Seeds of Change quinoa and brown rice mix

Sauté peppers, onion, garlic, jalapeño, and chiles in 1 tbsp olive oil until fragrant

Add chicken, beans, quinoa, rice, red enchilada sauce, lime juice, cumin, chili powder and salt and pepper

Dump it all into a greased baking dish and smother it in cheese if you'd like

Bake at 350 for 30 min
