Quinoa Black Bean Chicken Enchilada Casserole

Ingredients

  • 1 cup pre cooked quinoa & brown rice I use Seeds of Change
  • 1 can black beans rinsed and drained
  • 1 cup shredded chicken
  • 1 each red and yellow bell peppers diced
  • 1 diced onion
  • 3 cloves minced garlic
  • 1 medium jalapeño chopped and seeds removed
  • 1 small can green chiles
  • 2 cups red enchilada sauce
  • Juice of 1 lime
  • 1/2 tsp cumin
  • 1 Tbsp chili powder
  • Salt & Pepper to taste
  • Shredded cheddar cheese optional

Instructions

  1.  Seeds of Change quinoa and brown rice mix
  2. Sauté peppers, onion, garlic, jalapeño, and chiles in 1 tbsp olive oil until fragrant
  3. Add chicken, beans, quinoa, rice, red enchilada sauce, lime juice, cumin, chili powder and salt and pepper
  4. Dump it all into a greased baking dish and smother it in cheese if you'd like
  5. Bake at 350 for 30 min
  6. This would be a perfect Meatless Monday meal if you left out the chicken! Enjoy!
