Cinnamon Apple Dutch Baby

If you don't have a cast iron skillet or oven safe frying pan you can sauté apples in a pan on the stove top and transfer mixture to a glass baking dish or cake pan. Add batter and bake.

Ingredients

  • 1/3 cup flour I like Bobs Red Mill gluten free all purpose
  • 1/2 cup milk of choice
  • 2 eggs
  • dash of nutmeg
  • cinnamon
  • 3-4 Tbsp grass fed butter or coconut oil
  • 2 honeycrisp apples

Instructions

  1. Preheat oven to 425 degrees.
  2. While oven is heating peel, core and thinly slice apples.
  3. Sauté apples in butter or oil in a cast iron skillet on stove top for about 3-5 min. Sprinkle generously with cinnamon.
  4. Place skillet with apples in the oven while preparing batter.
  5. Combine milk, eggs, flour and nutmeg and place in blender or bowl. Blend or whisk until smooth.
  6. Remove skillet from oven and pour batter over apples. I like to add a few slices of apple on top.
  7. Return to oven and bake 15-20 min or until golden brown and puffed up.
  8. Slice into wedges and serve.
  9. Sprinkle with coconut sugar and a squeeze of lemon juice, drizzle pure maple, or top with fresh fruit preserves. Enjoy!
