Preheat oven to 425 degrees.

While oven is heating peel, core and thinly slice apples.

Sauté apples in butter or oil in a cast iron skillet on stove top for about 3-5 min. Sprinkle generously with cinnamon.

Place skillet with apples in the oven while preparing batter.

Combine milk, eggs, flour and nutmeg and place in blender or bowl. Blend or whisk until smooth.

Remove skillet from oven and pour batter over apples. I like to add a few slices of apple on top.

Return to oven and bake 15-20 min or until golden brown and puffed up.

Slice into wedges and serve.

Sprinkle with coconut sugar and a squeeze of lemon juice, drizzle pure maple, or top with fresh fruit preserves. Enjoy!
