Roasted Fingerling Potatoes with Bacon


  • 2 lbs fingerling potatoes quartered or halved
  • 1 yellow onion cubed
  • 5 slices Peterson Farms uncured bacon cut into fourths
  • 1 tsp garlic powder
  • hickory smoked salt to taste Harmon's grocery sea salt would work too
  • dash of black pepper


  1. Preheat oven to 425 degrees
  2. Coat a baking sheet with oil.
  3. Toss potatoes and onion in salt, pepper and garlic powder.
  4. Spread evenly onto baking sheet and top with bacon pieces.
  5. Bake for 45 minutes or until desired crispness is achieved. Enjoy!
