Zucchini Hummus

Ingredients

  • 2 medium zucchinis cut into chunks (about 2-3 cups)
  • 1/2 cup raw almond butter or tahini
  • 2 cloves of garlic peeled
  • 2 T olive or avocado oil only if needed depending on how oily your almond butter is
  • 2 T lemon juice
  • 1 teaspoon sea salt
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne

Instructions

  1. Combine all of the ingredients in a high powered blender or food processor and process until smooth.
  2. Taste and adjust seasonings if needed.
