Pumpkin Pie Overnight Oats

Ingredients

  • 1/2 cup old fashioned oats
  • 3/4 cup toasted coconut almond milk or milk of choice
  • 1/8 cup pumpkin puree not pumpkin pie filling
  • 1/8 cup plain greek yogurt
  • 1 tbsp chia seeds
  • 1 tbsp vanilla protein powder I used iFit Nourish
  • 1 tbsp pure maple syrup
  • 1 tbsp chopped pecans
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp vanilla extract

Instructions

  1. Combine all ingredients in a mason jar or plastic container with a tight fitting lid.
  2. Stir well, cover and refrigerate up to 8 hours or overnight.
  3. Add a splash of milk before serving and enjoy!
