1grapefruittough membrane removed and cut into chunks

Kiwi Citrus Vinaigrette:
1tspolive oil
2kiwis peeled
1lemonjuiced
2-3cuties or 1 orangejuiced
1small shallotchopped
2tbspred wine vinegar
1tspDijon mustardcheck ingredients
2tbspbeet juiceoptional for color
Salt and pepper to taste
Instructions
Vinaigrette: In a sauté pan heat oil over medium heat and add shallot. Sauté until soft. Add to a blender or magic bullet (which I prefer for small batches of dressing). Add remaining ingredients and pulse until smooth.
Layer salad ingredients and top with Kiwi Citrus Vinaigrette
