Grilled Pineapple Guac

Ingredients

  • 3 large ripe avocados
  • 1/3 cup red onion finely diced
  • 1-2 serreno peppers seeds removed and finely diced
  • handful of cilantro finely chopped
  • 1 tbsp fresh lime juice
  • 1-2 cloves garlic minced
  • kosher salt to taste
  • 3 slices about 1/2 inch thick fresh pineapple
  • 1 tsp olive oil or cooking spray

Instructions

  1. Heat grill to high. About 300 degrees. Brush pineapple slices with olive oil or spray with cooking spray. Grill 5 minutes per side, until nicely browned. We like ours charred a bit for extra flavor! Remove and allow to cool to room temperature. Once cooled remove core, dice and set aside.
  2. Cut avocados in half lengthwise. Remove pit and scoop flesh from its shell into a bowl.
  3. Add lime juice and salt and mash lightly with a fork.
  4. Add onion, peppers, cilantro, garlic and pineapple. Mix well.
  5. Serve with veggies, tortilla chips, or on top of Honey-lime shrimp tacos. Enjoy!
