Turkey Sausage, Potato and Brussel Sprout Hash

Ingredients

  • 1 pound ground turkey sausage we like Jenni-o
  • 1 pound brussel sprouts ends trimmed and halved
  • 1 pound baby golden yellow potatoes quartered
  • 1 small yellow onion chopped
  • 2 tbsp avocado oil
  • 1 tbsp Primal Palate breakfast seasoning
  • 1 tbsp garlic powder
  • kosher salt and pepper to taste
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 425 degrees.
  2. On a parchamant lined cookie sheet spread potatoes and brussel sprouts out evenly. Drizzle with 1 tbsp avocado oil and sprinkle with breakfast seasoning, salt and pepper to taste. Toss with your hands to coat evenly.
  3. Bake for 25-30 minutes or until brussel sprouts and potatoes are crispy brown.
  4. Meanwhile add turkey sausage and garlic powder to a cast iron skillet and cook over medium heat, until sausage is well done.
  5. Add 1 tablespoon oil and chopped onion to the skillet and cook for an additional 5 minutes.
  6. Remove sprouts and potatoes from the oven once browned and add to skillet. Continue cooking for five minutes and adjust seasoning if needed.
  7. Serve in individual bowls and top with cheddar cheese. Enjoy!
  8. *If serving for breakfast top it off with an egg or two!
